So I went ahead and took apart my cordless phone and stripped it barebones, wrapped it all in electrical tape to make it look pretty much like a bomb My own mediocre attempt at humor has been highly amusing to myself.. I noticed that it takes a 9v jack, now if I wanted to make a beigebox out of this to spy on the neighbors from my house, how would I be able to power it? Could I use a standard 9v battery? And if I could about how long would it last?

Depending on how much power it needs, you need to experiment. Try hooking a 9v up to it. If that doesn't work, you might need to try hooking more to it in a way that both batteries will equally give it power, to double the power each time. So your best bet is to experiment. Don't know how long it'll last. Until they call the phone company or depending on the battery. Plus, make sure that the cordless reaches the house too(signal).
