I'll suggest the gamesurge network.
irc.us.gamesurge.net or irc.eu.gamesurge.net
This network used to be gamesnet a year or so ago. Its been very stable since gamesurge took over. The channels have Chanserv to take care of all the ops and crap like that which makes it hard to "take over" a channel. If you register, your ip will be masked in the channel, which is a good thing.

I definatly wouldn't use the "villageirc" server. They have some harsh restrictions on your nick and its a very small network.
